leveling challenge for old loft floor

I need to level a hayloft floor constructed of rough sawn 2x6 & 2x8 pine/oak planks. The planks are not T&G, and have warped & shrunk as they dried so that there are various gaps between the boards up to about 3/4" and variations in thickness/height up to about 1/2" Any suggestions on how to level this floor so I can lay either linoleum or T&G hardwood flooring over it? Sanding is not an option--it looks like 20P nails were used and the wood is so hard now there's no way I could countersink them all to keep from tearing up a sander. Someone suggested laying wire mesh and pouring a self-leveling flexible concrete product over it, but I don't know what that product would be, or what would keep it from dripping through the cracks between the boards.
