Arched doorway and sheetrock

My wife and I want to install an arched doorway to our kitchen and I was curious about the pros and cons between 1) simply kerfing sheetrock to form the arch and 2) forming an arch out of plywood before applying the sheetrock. Seems like option (2) is best from a structural standpoint... any ideas?
