Slab Foundation

I'm building a barn with a slab foundation and am ready to dig the footings. I note that the grader left tread ridges in the foundation 'field' and that there is one corner a couple inches lower than the highest corener. So how flat is flat? Are the forms supposed to be absolutly level (X in Y tolerance) Should I regrade with a sovel to within X in Y? Do I leave it alone and level the 4" of sand which might be 2" deep in some areas and 6" in other. Are string levels accurate enough for 52ft (line sag) How do I ensure the proper depth of sand, set pegs at 4"? How do I screed the grade to levewhen the area is 24ft wide. The best "dry" lumber I can find looks more like a bow tie after a week, even the pressure treated stuff. I cannot find any details in several dozen books about foundations.
