House leveling

I recently under took a project to finish my basement. As part of that project I planned to replace the stairway leading to the basement. The original stairway was cut into the approximate center of the house with one side against the center load bearing foundation wall. The floor joists on the opposite side of the stairs seemed to have settled quite a bit over the years (the house is about fifty years old). My question is should I attempt to level the sagging floor joists (the new basement plans call for a wall there which would help to support the joists) or am I better off to leave well enough alone (avoiding any possible damage to plaster during leveling).
