How much can I do myself before consulting a pro?

I'm an avid DIY'er, and am pretty handy with most basic trades but don't have any professional training. I'd like to learn enough to be able to build my own room addition, or take on some basic remodeling projects that involve structural changes (wall removal, relocation etc.) Is there a rule of thumb as to how much I can do by reading books, watching videos, and using common sense? Which professionals should I employ in undertaking a room addition project given my level of experience? Finally, where can I learn more about structural elements of home construction and remodeling?
