The high and low settings on your furnace generally indicate the temperature at which the furnace turns off (high), and the temperature at which the furnace turns on (low). Having these about 20 degrees apart is typical, providing what's known as hysterisis. Look in your owners manual for recommendations, but often a 180 degree high setting and a 160 degree low setting is sufficient. If these are too close together, you could experience more frequent cycling.

As to bypassing the furnace, you would need a local HVAC expert to examine your particular layout to see what's optimal. If you don't have a secondary source of hot water heating, then bypassing the furnace won't work.

Also, if your furnace is used to provide hot water for your home (for showers, etc.), be advised that these high temperatures (160-180) can cause severe burns if not mixed with ample cold water.

Consider using temperature regulating valves wherever possible to avoid possible burns.
